Yoghurt, Banana and Oat Muffins

These muffins are delicious! They are perfect for lunchboxes or an afternoon snack. The yoghurt and banana make them really moist and the oats give extra energy to keep kids going all day.

Ingredients

1 cup yoghurt
1 cup rolled oats
1 egg
1/2 cup vegetable oil
1/4 cup sugar
3/4 cup mashed banana
1 1/4 cup self raising flour, preferably wholemeal
Optional – add some sultanas or dates to taste to your liking.

Method

Preheat oven to 220 degrees.
Combine yoghurt and oats. Put into fridge for 30 mins – no more, no less!
Add remaining ingredients in this order – egg, oil, sugar, banana, flour and mix gently.
Spoon mixture into a 12 hole muffin tray lined with baking paper.
Bake 15-20 mins or until cooked in centre. They should still be moist.
Cook on wire rack
