Sweet Potato Brownies

No one will guess that these brownies are made with sweet potatoes and dates. A delicious lunchbox or after school treat packed full of goodness.

Ingredients

2 medium sweet potatoes
3/4 cup almond meal
3/4 cup wholemeal flour
10 medjool dates, pitted and chopped (or 15 dried dates soaked in warm water for 15 mins)
1 tsp cinnamon
1/3 cup cacao powder
1/4 cup pure maple syrup

Method

Peel and chop sweet potato, then steam or cook in microwave until very soft.
Place sweet potato, almond meal, flour, cinnamon, dates, cacao powder and maple syrup in bowl of a food processor and process until a smooth batter.
Pour batter into a lined 20 cm square tin and bake at 180 degrees for approx 25 mins (or until skewer comes out clean).
Leave in tin for 10 mins before removing to cut into even squares.
Store in refrigerator.
