Sushi

Kids love Sushi. You can use leftover rice (white or brown) and any filling of your choice. Fun to make and perfect finger food for the lunchbox or an afternoon snack!

Ingredients

Quantities will depend on how many rolls you wish to make
Rice – preferably brown
Avocado
Carrot, grated
Beans, sliced longways into thin strips
Cucumber
Low fat Mayonnaise
Tuna, optional
Nori sheets
Low salt soy sauce (optional)

Method

Place 1 nori sheet, shiny-side down.
Using damp fingers, spread rice over nori, leaving a 2cm strip at 1 short end.
Spread 2 teaspoons mayonnaise over centre of rice.
Arrange cucumber, avocado and carrot over mayonnaise. Roll up firmly to form a roll. Cut into 6 slices. Repeat with remaining nori sheets.
Serve with soy sauce (optional)
