Savoury Brownie

Savoury Brownies are a delicious snack and a nice change from having something sweet. These ingredients can be adapted to your taste. They are fantastically fudgy, freeze well and are a perfect lunchbox snack.

Ingredients

2 eggs
3/4 cup grated low fat cheese
3/4 cups low fat milk
3 cups baby spinach leaves
1 large or 2 small zucchinis, grated and liquid squeezed pit
3/4 cup almond meal (if no almond meal, just add this amount extra in SR flour)
3/4 cup Self Raising flour
1/2 teaspoon sea salt
1/4 teaspoon nutmeg
* note, any vegetables can be substituted either for your taste or to simply use up what’s left in the fridge

Method

Preheat oven to 200°C and line a small square baking tin with baking paper.

In a bowl combine beaten eggs, milk and cheese. Stir in the zucchini, spinach, almond meal, flour, sea salt and nutmeg. The mixture will be thick so use a wooden spoon to combine everything.

Press mixture into the lined tin.

Bake for 40 minutes. Let cool in the tin for 10 minutes before slicing into 16 squares for a snack or larger squares if having for dinner.
