Rainbow Nori
This recipe is colourful, simple and can be modified based on what is in season or in your fridge
Ingredients (makes 10 rolls)
1 packet of Nori / Sushi sheets
1 bag of rainbow salad (or 2 carrots, 1 beetroot & 1 broccoli stem finely sliced)
300g chicken
1-2 avocadoes
Wasabi and pickled ginger to taste
Method
Lay a sheet of Nori on a flat surface and mash a slice of avocado about 1/3 of the way along it
Layer a small handful of rainbow salad and about 30g of chicken on top of avocado
Add wasabi and pickled ginger to taste
Moisten the ends of the Nori sheet and wrap tightly
Cut in half and serve
TIP fold the ends in tightly like a rice paper roll to create an enclosed wrap.
