Pizza Scrolls

These pizza scrolls are perfect for the lunchbox. Fill them with your families favourite vegetables like capsicum, mushroom, zucchini and tomato. They also make a delicious after school or weekend snack.

Serves: 12 scrolls

Ingredients:

1 1/2 cups wholemeal SR flour
1 1/2 cups SR flour
45 gr margarine
1 cup low fat milk
Tomato paste
2 cups chopped vegetables of your choice e.g. mushrooms, capsicum, zucchini
Olives
Garlic
Herbs
1 1/2 cups low fat grated mozzarella cheese

Method:

Turn oven to 190 degrees Celsius
Sift flour into a large bowl and rub in margarine
Add milk gradually and mix to a soft dough
Roll dough into a rectangle (approx. 30cm x 23cm) on a floured board
Spread dough with tomato paste, garlic, vegetables, herbs and cheese
Roll up lengthwise, sealing the join with a little water.
Cut into 12 circles and lay in a cake tin that has been sprayed with oil
Bake for 25-30 mins

These can also be made as Apple Scrolls.
Simply substitute the savoury fillings for 2 peeled and chopped apples, 1 cup sultanas and 2 tsps mixed spice
