PB Brekkie Muffins

A great alternative to peanut butter on toast for busy mornings. These muffins also make a great lunchbox snack.

OCCASIONAL CANTEEN RECIPE
Makes 12 muffins

Ingredients

1 cup self raising flour
1 cup of oats, muesli or crushed cereal of choice
1 1/2 teaspoons of bicarbonate soda
2 bananas (mashed)
1 zucchini (finely grated)
1/4 cup rice malt syrup (you could also try honey)
2/3 cup peanut butter
1/3 cup plain yoghurt
1/3 cup milk
2 eggs
1 teaspoon vanilla essence
Topping of choice: coconut, pepitas, sunflower seeds or muesli all work well

Method

Preheat oven to 180 degrees and spray a 12 hole muffin tin.
Combine all ingredients into a bowl and mix well.
Place mixture into muffin tins and top with your topper of choice.
Bake for about 20min or until cooked through.

NOTE – add 1/4 cup LSA for added goodness. If you try this option add an extra egg as well.
