Mexi Bites

A great way to use up extra Mexican and get some extra vegetables into lunchboxes.

Serves: 12-14 bites

Ingredients

2 cup mixed leftover Mexican vegetables (kidney beans, onion, spinach, capsicum, corn)
1 cup reduced fat cheese
2 egg
1/2 cup self raising flour
1 teaspoon paprika

Method

Preheat oven to 190 degrees and line a baking tray with grease proof paper.
Combine all ingredients in a bowl and mix until combined.
Spoon golf ball size bites on to tray (this recipe makes 12-14 bites).
Bake for 20 minutes or until golden brown.
