Mac ‘n’ Cheese Corn & Zucchini Slice
Who doesn’t love Mac ‘n’ Cheese! This recipe has corn & zucchini but any veggies could be used. It’s perfect to cut up into squares for lunch boxes or to have as an easy lunch for work.
Ingredients
1 1/2 cups macaroni
2 zucchinis
small tin corn kernals or kernals cut from 1 cob
1 cup ricotta
1 cup cheddar cheese
1/4 cup olive oil
5 eggs
1 cup self-raising flour
1 tsp salt
1/4 cup cheddar cheese (or 100gr feta cheese)
Method
Grease a 20cm x 30cm baking dish and line with baking paper.
Cook macaroni in water as per packet instructions.
Put the cooked pasta, zucchini, corn, ricotta, 1 cup of cheddar, oil, eggs, self-raising flour and salt into a large mixing bowl and mix with a spoon until combined.
Spoon the mixture into baking dish and sprinkle top with the extra cheddar cheese or crumble over feta.
Bake in the oven at 180 degrees for 40 minutes or until golden.
Allow to cool and then cut into squares.
