Frozen Berry Granola Bites

Try these healthy frozen yoghurt treats for a refreshing and cooling dessert. They are a great option for any celebrations and the kids will love them!

Ingredients

1/4 cup of granola or almond meal or crushed nuts
2 tablespoons coconut oil, melted (can replace with 1 tablespoon honey, 1 tablespoon margarine)
3/4 cup natural or vanilla low fat yoghurt
2 tablespoons honey (omit if using vanilla yoghurt)
1 1/2 cups frozen or fresh chopped fruit – berries work best but banana is also fine
6 cup muffin tin and liners

Method

Line the muffin tins with silicone patties or baking paper. You can also add directly to a non-stick muffin tin.
Stir together granola (or almond meal \ crushed nuts if using) and coconut oil.
Spoon a small amount into the bottom of each muffin cup and press down firmly.
Mix together yoghurt and honey. Spoon 2 tablespoons on top of each granola base.
Top with chopped fruit.
Freeze until firm, about 6 hours. To serve, remove from the muffin tin and enjoy!
