Easy Banana Muffins

These muffins are super easy and a great way to use up overripe bananas. Other ingredients such as blueberries, dates or sultanas can be added to taste. They are perfect for the lunchbox.

Ingredients

4 ripe bananas
1/3 cup sugar
2 tbs olive oil
2 egg beaten
2 cups wholemeal self-raising flour
1/4 cup milk
coconut to sprinkle on top
* optional – blueberries, sultanas or dates to taste

Method

Preheat oven to 180C. Line 12 hole muffin tin with baking paper.
Beat egg and bananas together, then add all other ingredients and gently mix well.
Fill muffin tins ¾ full with mixture. Sprinkle coconut on top.
Cook for approximately 20 minutes until risen and golden.
