Christmas Bliss Balls

These Bliss Balls pack a nutritious and energy filled punch. They are a fantastic snack or lunchbox item and better still – the kids will love making them!

Ingredients

1 cup nuts (almonds or cashews) & Pumpkin Seeds
6 fresh medjool dates, or 12 dried dates
¼ cup  cacao powder
½ cup desiccated coconut
Pinch cinnamon
1 teaspoon vanilla extract
1 tablespoon chia seeds
3-4 tablespoons coconut oil, melted

Method

Remove seeds from dates and roughly chop. If using dried dates, soak them first in hot water for 30 mins then drain.
Add nuts, dates, cacao powder, desiccated coconut, cinnamon, vanilla, chia seeds and coconut oil to a food processor.
Blitz until all ingredients are combined and have a paste like consistency. Add a small amount of water if the mixture looks dry until it sticks together.
Roll bite size pieces into firm balls with your hands.
Roll the balls in desiccated coconut, crushed nuts, sesame seeds or goji berries and place them in a container.
Place in fridge to chill.
