Chimichurri

Use as a marinade or sauce to add a South American zing to your cooking

Makes about 3/4 cup

Ingredients

1 bunch of parsley
1 bunch of coriander
Large handful of rocket
1/2 cup olive oil
2 cloves garlic
1 teaspoon of fresh chilli or chilli flakes
1 teaspoon cumin
1/2 teaspoon salt
Juice of 1 lime.

Method

Place all ingredients in a blender and pulse until a consistency between chunky and smooth.
