Chicken Mexi Cones

These are super easy to make and a great way to use up leftover Chicken!

Serves: 8 wraps

Ingredients

1 packet packet of wraps – use smaller ones if you want a smaller serving size, or cut large ones in half
2 cups of filling (we used left over roast chicken but a Mexican mix or any filling you like would be fine)
200g grated cheese
1 cup salsa (optional)

Method

Preheat oven to 180 degrees Celsius. Line a tray with baking paper.
In a bowl, mix the chicken (or other filling), salsa and one-quarter of the grated cheese.
Fold the bottom third of the wrap up, pinch in the middle and roll over itself to form a cone. Stuff the cone with filling, then top with cheese. Lay on the prepared tray seam side down. Repeat the process until all the ingredients are used.
Bake for 12-15 minutes or until cheese has melted and wrapper is crisp.
Cups freeze well and can be defrosted in the microwave and heated in a pie oven.
