Cheese & Spinach Triangles
These spinach packed triangles are fabulous for the lunchbox or a snack. Can be eaten hot or cold.
Ingredients
2 x 250 grams packets of frozen spinach
500 grams low fat ricotta cheese
125 grams low fat feta cheese
Filo pastry (reduced fat puff pastry could be used)
Olive Oil
Method
Defrost spinach.
Microwave spinach according to packet directions until almost cooked, transfer to colander and squeeze out as much fluid as possible.
Transfer spinach to mixing bowl and add ricotta and feta cheese. Mix until combined.
Take one sheet of filo pastry and fold into quarters long ways (so you have a long narrow rectangle).
Place heaped tablespoons of filling onto one end of pasty and fold up making a triangle shape until at the other end. (if using puff pastry, cut sheet into quarters, add filling to one side and fold over to make a triangle before sealing edges)
Place triangles on baking tray lined with baking paper. Brush top with olive oil.
Bake at 180 degrees until pastry is golden (approx. 15-20 mins)
