Br-ushi
Bread roll sushi, or “br-ushi” is a simple and fun variation to sandwiches or rolls in the lunchbox.
EVERYDAY CANTEEN RECIPE
Ingredients
1 bread roll or baguette
Chicken or tuna
Vegetable sticks eg cucumber, carrot and capsicum
Method
1. Hollow out the bread roll using the handle end of a spoon, to create a tunnel length wise.
2. Lay vegetable sticks into the hole or tunnel you have created in your bread roll.
3. Stuff the remainder of the space in roll with the chicken or tuna.
4. Cut the roll in half (or 3 cm width rings) to form your br-ushi rounds.
You may wish to add some avocado or low fat mayonnaise to the chicken or tuna, before stuffing the bread roll.
