Black-Eyed Bean Patties

These patties can be used for burgers and are fantastic finger food for the lunchbox. Make a large batch for dinner and keep some as leftovers. Can be cooked in a pan or on a barbeque.

Ingredients

2 small onions, finely chopped
1 clove garlic, finely chopped
1\2 tsp chilli powder (optional)
2 1\2 tsp ground cumin
400 gr can black-eyed peas (or black beans), drained and rinsed
2 eggs
40 grms breadcrumbs
Add vegetables to taste such as frozen peas, corn or chopped capsicum (optional)
Salad to serve

Method

Heat oil in pan and cook onion and garlic until golden. If using other vegetables, add these now and cook lightly.
Transer to bowl and add chilli, cumin, beans, egg and bread crumbs.
Mix until combined and break up the beans slightly. A potato masher can be good to use.
Divide mixture into 8 patties.
Cook until golden on each side.
Eat with salad, or add to a burger with lettuce, tomato and beetroot.
