Banana and Coconut Loaf
Leftover bananas can easily be used to make this delicious snack
Serves: 1 loaf or 12 muffins
Ingredients
1 1/2 cup self raising flour
3/4 cup coconut
1/3 cup brown sugar
2-3 mashed bananas
1 egg
1/2 cup natural or Greek yoghurt
1/2 cup vegetable oil
Method
Preheat oven to 180 degrees and grease a loaf tin.
Combine all ingredients in a large mixing bowl and stir until well combined.
Pour mixture into loaf (or muffin) tin and bake for 40-45 minutes (or until golden).
