Apple and Zucchini Muffins

These muffins are not only delicious but they are healthy too! Muffins are a great way to sneak in a few extra vegies. Make a batch for lunchboxes and freeze, or bake them fresh and take on a picnic over the school holidays! Don’t tell anyone there’s zucchini in there!

Ingredients

2 cups wholemeal self-raising flour
1/2 cup brown sugar
1 tsp cinnamon
2 eggs, lightly beaten
1/2 cup (125ml) vegetable oil
1 tsp vanilla essence
1 cup apple, peeled and grated (or chopped into small pieces)
1 cup zucchini, peeled and grated

Method

Preheat oven to 180°C (160°C fan-forced). Spray a 12-cup muffin tin with cooking spray.
In a bowl, combine the sifted flour, brown sugar and cinnamon.
In a separate bowl mix the wet ingredients – eggs, oil, vanilla, apple and zucchini.
Pour the wet ingredients into the dry ingredients and gently stir the mixture until all ingredients are just combined.
Spoon mixture evenly into muffin tins and bake for 20-25 minutes.
