Vegie Nuggets
These simple veggie nuggets always bring a smile in our house. The recipe is simple and easy. Any favourite veg can be added. They are perfect for the end of the week when you’re looking to use leftover ingredients in the fridge. Wonderful lunchbox finger food and a great recipe for kids to help you with.
Ingredients
2 medium potatoes, chopped
2 medium carrots, chopped
Small tin corn – or kernels cut from the cob
1/2 cup frozen peas
1/2 a head of broccoli
1 small egg beaten
1/2 cup low fat grated cheese
Breadcrumbs
Method
Preheat oven to 200 degrees.
Steam vegetables until soft (start with the potatoes & carrots first then added the broccoli, corn (if fresh) & peas.
Transfer vegetables to a bowl & mash.
Add cheese & stir so it melts into mixture.
Add egg & mix well. Season to taste.
Take spoonfuls of mixture & roll into breadcrumbs. Place on baking tray (lined with baking paper) & flatten slightly.
Bake for approx 25 – 30 minutes until lightly golden.
Note you can place uncooked nuggets in the freezer ready to defrost & cook when you need a quick, healthy snack. Perfect for afternoon tea on a cold winters day.
