Broccolini, Tomato & Haloumi Salad
This is a beautiful salad to have as part of a family meal or add chicken or lentils as a stand-alone meal.
Ingredients
2 bunches Broccolini
350g Cherry or Grape tomatoes
½ tbs extra virgin olive oil
200g haloumi, thinly sliced
Salsa verde
¼ cup finely chopped basil
¼ cup finely chopped flat-leaf parsley
½ red onion, finely chopped
1 tbs drained baby capers
1 garlic clove, crushed
1 tsp lemon zest
2 tbs lemon juice
2 tbs extra virgin olive oil
Method
Cook the Broccolini in a large saucepan of boiling water for 2 mins or until just tender. Refresh under cold water. Drain.
Meanwhile, to make the salsa verde, combine the basil, parsley, onion, capers, garlic, lemon zest, lemon juice and oil in a small bowl. Season.
Heat a barbecue grill or chargrill on medium-high.
Combine tomatoes and oil in a bowl. Cook tomatoes and haloumi on grill for 2 mins each side or until lightly charred.
Arrange half the Broccolini, tomato and haloumi on a serving platter.
Spoon over half the salsa verde. Top with remaining Broccolini, tomato, haloumi and salsa verde.
TIP: For a twist, try adding sliced chargrilled chicken breast or rinsed drained canned lentils to the salad.
