Mexican Tostadas
These Tostadas are super easy to make and are a great lunchbox food. Mix up the ingredients to use anything you have in your pantry or fridge. They are hands down a lunchbox hit!
Ingredients
Capsicum – chopped
Corn kernels (tinned or fresh)
Chicken – chopped leftover
Red Kidney Beans
Low fat Cheese – grated
spices to taste such as ground cummin and coriander
Wholemeal Wraps
Natural yoghurt (optional)
Method
Mix chopped capsicum, corn kernels, chopped leftover chicken, kidney beans and a couple of handfuls of grated cheese, along with some cummin and ground coriander.
Place mixture inside a folded wholemeal wrap and toast in a sandwich press until golden.
Leave to cool and then cut in half to fit into the lunchbox.
Serve with a small pot of natural yoghurt if desired.
This also works well with any Mexican-type leftovers, such as Chilli Con Carne or Taco beef mince.
