Bite Size Socca
Socca is a gluten free flat bread based on chickpea flour. It is easy to make, higher in protein and has a nuttier flavour than normal flat breads. It can be used in the place of wraps or pita bread, as a pizza base, or cut into bite size pieces which are a great lunchbox addition.
Ingredients
1 cup water
1 cup chickpea (besan) flour
1 tablespoon olive oil
1 teaspoon salt
Seasonings: our favourites include chilli powder (1 teaspoons) and lime juice (1/2-1 tablespoon), garlic (1 clove) and oregano (1 tablespoon) or Mexican flavours.
Method
Whisk together all ingredients (including seasoning of choice) and let sit for 30 minutes to 2 hours to let flour absorb liquid.
Pour batter into non stick pan. It is up to you how large you make each piece.
Cook for 3-4 minutes and flip. Cook for an additional 3-4 minutes or until brown on both sides.
If serving as bite size pieces in the place of crackers, chop into small squares and crisp in an oven (180 degrees for 5-10 minutes).
NOTE you can make your own chickpea flour by soaking 250g dried chickpeas for 8-12 hours. Letting them dry out and then blitzing them for 2-3 minutes in a high powered blender until they form a fine powder.
